LET’S MAKE SOMETHING SWEET

A few simple steps.

  1. 01

Finely grate the zest from half an orange. Beat softened butter, sugar and zest together, then stir in flour and salt to make a soft dough.

  2. 02

Shape into a small rectangle about 1 cm thick on baking paper. Chill for 10 minutes. Heat the oven to 325 F / 160 C (140 C fan).

  3. 03

Cut the dough into 4 equal rectangles, separate them on a small baking tray and prick gently with a fork. Bake for 18-22 minutes, until the edges are pale golden.

  4. 04

Leave on the tray for 5 minutes, then transfer carefully to a rack and cool for another 10 minutes. Serve two cookies per person.
