A few simple steps.
- 01
Cook soba according to the pack, then drain and rinse briefly under cool running water. Cook edamame separately following its packet and drain well.
- 02
Cut the cucumber into thin matchsticks. Whisk peanut butter, soy sauce, maple syrup, 1 tbsp lime juice and water into a smooth dressing.
- 03
Toss the noodles and edamame with the dressing, loosening with a little more water if needed. Fold in the cucumber just before serving.
- 04
Divide between 2 bowls. Taste and squeeze over more lime if wanted; serve at room temperature, without leaving the cooked noodles out for an extended period.
A note from the kitchen
Contains peanuts and soy. Cooking edamame according to its packet is important even when serving the finished bowls cool.
